The Trillium Cooking School opened its doors for business in the spring
of 1983 in the country near the village of North Gower, in eastern Ontario, Canada, just south
of Ottawa, Canada's capital city.
Classes are held in Pam and Read Collacotts 160-year old log home,
completely renovated by the Collacott's to retain early Canadian charm
in a fully equipped modern kitchen. Classes are taught by Pam Collacott and an ever changing list of visiting chefs, cookbook authors, and cooking teachers. Most classes include hands-on participation by up to a maximum of 14 adults or 8 children age 9 and up. Demonstration classes for groups of 30 are also included in the schedule of classes. By far the most popular class offered at TCS is the Friday evening
"Dinner at Eight" class. After choosing the menu in advance from a
lengthy list of choices, groups of 12 to 14 friends or co-workers arrive
at 7 pm and are greeted by Pam and Read with Kir Royale and hors
d'oeuvres. With Pam's guidance, the group prepares a 5 or 6 course meal,
then sits down to enjoy the fruits of their evening's labour at a
candle-lit table set with linen and fresh flowers. The waiting list for
this popular evening often extends to almost 2 years, as guests return
over and over again. When you attend classes: Please wear low-heeled soft soled shoes, as the kitchen floors are pine. Bring wine for your own consumption if you wish. Smoking is only allowed outdoors on our screened porch. Services Offered |
